Kashmiri Methi Matar
Kashmiri Methi Matar is a famous Indian curry and often seen in restaurants. It is mainly served in Kashmir and few other northern part of India. The main ingredient of this recipe is kashmiri masala and dry ginger coriander powder which produces different flavor and different taste to the dish. 

Ingredients

  • Methi/ fenugreek leaves - 1 bunch
  • Mustard oil - 2 tsp
  • Cumin seeds - 2 tsp
  • Green chillies - 2 
  • Onion (large) - 1
  • Matar/ green peas - 1 cup
  • Salt as needed
  • Kashmiri chilli powder - 1 tsp
  • Turmeric powder -  1/4 tsp
  • Coriander powder -  2 tsp
  • Fennel powder - 1 tsp
  • Dry ginger coriander powder - 2 tsp
  • Kashmiri masala - 2 tsp
  • Sugar - 1 tsp
  • Water as needed.

Method

  1. Blanch methi leaves and keep aside (add cooking soda to retain its color).
  2. Heat mustard oil in a pan, add cumin seeds, green chillies and chopped onions.

  3. Toss them well.
  4. Add matar.
  5. Add salt.
  6. Add kashmiri chilli powder, turmeric powder, coriander powder, fennel powder, asafoetida, dry ginger coriander powder, kashmiri masala and some sugar.
  7. Add water and boil for few mins.
  8. Add blanched and chopped methi leaves while boiling and mix well.
  9. Add ghee and serve with roti.
