Pav Bhaji

Pav bhaji is a fast food dish from Maharashtra, consisting of a thick vegetable curry usually prepared in butter and served with a soft bread roll. The dish originated in the 1850s as a fast lunchtime dish for textile mill workers in Mumbai. Pav bhaji was later served at restaurants throughout the city. Pav bhaji is now offered at outlets from simple hand carts to formal restaurants in India and abroad. Pav bhaji has many variations in ingredients and garnishes, but is essentially a spiced mixture of mashed vegetables in a thick gravy cooked on a flat griddle (tava) served hot with a buttered soft white bread roll.

Ingredients
  • Pav bread - 2
  • Butter - 2 tbsp
  • Onion (large) - 1
  • Tomato (medium) - 1
  • Carrot - 1
  • Potatoes - 3
  • Beans - 50 g
  • Ginger garlic paste - 1 tbsp
  • Green peas - 100 g
  • Turmeric a pinch
  • Chilli powder - 1 tbsp
  • Salt as needed
  • Capsicum - 100 g
  • Pav baji masala - 2 tbsp
  • Lemon - 1
  • Coriander leaves - 1/2 bunch
  • Sugar - 1 tsp
  • Water as needed
Method
Making of bhaji:
  1. Boil potatoes and keep aside.
  2. Finely chop capsicum, carrot, beans, onions and tomatoes.
  3. Melt butter in a pan, add chopped onions, saute.
  4. Add ginger garlic paste and cook till raw smell goes.
  5. Then add , chopped tomatoes, turmeric and cook till mushy.
  6. Add salt.
  7. Add pav baji masala and mix along.
  8. Add chopped capsicums, beans and carrot.
  9. Add fresh/frozen peas and cook along.

  10. Add cooked and mashed potatoes, mix and mash along.
  11. Add enough of water for the vegetable to get cooked.
  12. Boil till it becomes thick.
  13. Add butter.
  14. Add coriander leaves (chopped).
  15. Sprinkle sugar.
  16. Squeeze lemon.
Making of pav:
  1. Heat tawa, melt and spread butter.
  2. Divide pav into two and toast them till golden brown.
  3. Repeat for all pav.
  • Serve together.
