Beetroot Salad
Ingredients
- Beetroot - 2 (medium)
- Onion - 1/2 (large)
- Spring onions - 3 (green stalk)
- Cucumber - 1/4 cup
- Avocado - 3 tbsp (optional)
- Yogurt (thick) - 2 tbsp
- Sugar - 1 tsp
- Salt - 1/2 tsp
- Pepper powder - 1 tsp
- Lemon juice - few drops
- Oil - 1 tsp
- Cook beetroot in pressure cooker, peel off skin and chop them.
- Finely chop onions, spring onions, cucumber and avocado.
- In a mixing bowl, add yogurt, oil, sugar, salt, pepper powder, lemon juice and mix them well.
- Check for taste.
- Add chopped vegetables, mix along.
- Garnish and serve.
