Beetroot Salad

Ingredients
  • Beetroot - 2 (medium)
  • Onion - 1/2 (large)
  • Spring onions - 3 (green stalk)
  • Cucumber - 1/4 cup
  • Avocado - 3 tbsp (optional)
  • Yogurt (thick) - 2 tbsp
  • Sugar - 1 tsp
  • Salt - 1/2 tsp
  • Pepper powder - 1 tsp
  • Lemon juice - few drops
  • Oil - 1 tsp
Method
  1. Cook beetroot in pressure cooker, peel off skin and chop them.
  2. Finely chop onions, spring onions, cucumber and avocado.
  3. In a mixing bowl, add yogurt, oil, sugar, salt, pepper powder, lemon juice and mix them well.


  4. Check for taste.
  5. Add chopped vegetables, mix along.


  6. Garnish and serve.
