- Eggs - 2
- Sugar - 100 g
- Self - raising flour- 100 g
- Baking powder - 1 tsp
- Strawberry jam - 2 tbsp
- Strawberries - few
- Little granulated sugar for sprinkling
- Preheat oven to 180 degree C.
- Grease cake tin with butter or parchment paper and keep aside.
- Measure butter, sugar and eggs, add into a large bowl one by one.
- Beat all together until thoroughly blended.
- Add flour and baking powder.
- Blend with butter sugar and egg mixture with spatula.
- Pour mixture into cake tin.
- Bake in preheated oven for about 25 minutes until a tooth pick inserted comes out clean or until well risen tops and cakes spring back when lightly pressed with a finger.
- Leave to cool in the tin for few mins and then cool on a wire rack for few mins.
- When completely cold, divide cake into two equal parts, sandwich them with strawberry jam.
- Sprinkle some sugar and decorate with strawberries, serve.
