Cauliflower Rice

Ingredients
  • Basmati rice - 1 cup
  • Oil - 1 tbsp
  • Cinnamon - 1 
  • Cardamom - 1
  • Clove - 1 
  • Bay leaf - 1
  • Cauliflower - 1 
  • Onion - 1 
  • Tomato - 3
  • Green Peas - 1/2 cup
  • Ginger - 1 inch
  • Garlic - 3 fat cloves
  • Green chillies - 1 
  • Turmeric - 1/4 tsp
  • Chilli powder - 1 tsp
  • Coriander powder - 2 tsp
  • Biryani Masala powder - 3/4 tsp
  • Salt as needed
Method
  1. Soak rice in water for 20 minutes, drain it and keep aside.
  2. Heat oil in a pan, add all the spices, add chopped onions, saute.
  3. Add ginger, garlic, salt and green chillies.
  4. Add chopped tomatoes.
  5. Add turmeric, chilli powder, coriander powder and biryani masala powder.
  6. Add peas.
  7. Add cauliflower (wash and soak cauliflower in hot water for 15 mins before adding).
  8. Add required amount of water.
  9. Add rice.
  10. Cover and pressure cook it for 2 whistles.
  11. Garnish and serve with raita.
