Kalkandu Pongal Sadam(Sugar Candy Pongal)
Rock candy (also called rock sugar) is a type of confectionery mineralcomposed of relatively large sugar crystals.This candy is formed by allowing a supersaturated solution of sugar and water to crystallize onto a surface suitable for crystal nucleation, such as a string, stick, or plain granulated sugar.

Ingredients
  • Basmati Rice - 1/2 cup
  • Ghee - 3 tsp
  • Milk - 1 cup
  • Water - 1/2 cup
  • Kalkandu(Rock sugar candy) - 3/4 cup
  • Cashews - 10
  • Raisins - 10
  • Green cardamom powder - 1/4 tsp
  • Saffron strands(optional)
Method
  1. Fry basmati rice in 1 tsp of ghee, soak for 20 mins and wash.
  2. Add milk, water in a pan and leave it to boil, then add washed basmati rice.
  3. Stir well in medium flame.
  4. If needed add more milk or water.
  5. Dissolve rock sugar candy in a separate pan adding little amount of water, stir it continuously till it becomes thickens. 
  6. When rice is cooked, add dissolved rock sugar candy in it and mix well.

  7. Cook for 3-5 minutes, if sticky add extra hot water or hot milk to it.
  8. Pour ghee and fried cashews and raisins.
  9. Add cardamom powder.
  10. Add pinch of salt and mix to enhance the sweetness.
  11. Finally, Add saffron strands if needed and serve.
