Simple Eggplant Fry
Health Benefits of Eggplant:
Eggplant is a very good source of dietary fiber, vitamin B1, and copper. Polyphenols in eggplant have been found to exhibit anti-cancer effects
Ingredients
- Eggplant/aubergine - 1
- Oil - 1 tbsp
- Garlic - 4-5 cloves
- Sambar Powder - 2 tsp
- Salt as needed
- Heat oil in a pan.
- Add chopped garlic.
- Add salt and sambar powder.
- Add chopped eggplant.
- Stir fry well till eggplants are cooked and becomes soft.
- Serve.
