Simple Eggplant Fry

Health Benefits of Eggplant:

Eggplant is a very good source of dietary fiber, vitamin B1, and copper. Polyphenols in eggplant have been found to exhibit anti-cancer effects
Ingredients
  • Eggplant/aubergine - 1
  • Oil - 1 tbsp
  • Garlic - 4-5 cloves
  • Sambar Powder - 2 tsp
  • Salt as needed
Method
  1. Heat oil in a pan.
  2. Add chopped garlic.
  3. Add salt and sambar powder.
  4. Add chopped eggplant.
  5. Stir fry well till eggplants are cooked and becomes soft.
  6. Serve.
