Schezwan Noodles
Ingredients
- Plain noodles - 150 g
- Oil - 2 tbsp
- Garlic - 4 cloves
- Onions - 1 (large)
- Capsicum - 2
- Beans / any vegetable - 1/2 cup
- Pepper - 1 tsp
- Salt as needed
- Dry red chillies - 10
- Ginger - 1 (small)
- Garlic - 4 cloves
- Pepper - 1 tsp
- Soy sauce - 1 tbsp
- Salt as needed
Method
Preparation of schezwan sauce:
- Soak dry red chillies for about 1/2 hour in water(remove seeds as much as possible).
- Drain and grind the soaked red chillies adding 1 tbsp of water.
- Heat 1/2 tbsp oil in a pan, saute chopped ginger and garlic for 5 minutes.
- Add grounded red chilli paste, stir well.
- Add salt, pepper and soy sauce.
- Pour 1/4 cup of water and boil till oil seperates.
Preparation of noodles:
- Boil 5 cups of water adding 1/2 tbsp of oil and some salt.
- When it bubbles up, add noodles.
- Cover and cook for 6-7 minutes.
- Drain and keep cooked noodles aside.
Preparation of schezwan noodles:
- Heat 1 tbsp of oil in a pan.
- Add sliced onions, saute till golden brown.
- Add sliced capsicum, toss well.
- Add beans / any vegetable. (you can add any no of vegetable or meat)
- Stir fry for 5 minutes (till vegetables are cooked)
- Add schezwan sauce.
- Add salt and pepper.
- Add cooked noodles.
- Stir well and simmer for 5 minutes.
- Garnish and serve.
