Schezwan Noodles


Ingredients
  • Plain noodles - 150 g
  • Oil - 2 tbsp
  • Garlic - 4 cloves
  • Onions - 1 (large)
  • Capsicum - 2
  • Beans / any vegetable - 1/2 cup
  • Pepper - 1 tsp
  • Salt as needed
Schezwan Sauce:
  • Dry red chillies - 10
  • Ginger - 1 (small)
  • Garlic - 4 cloves
  • Pepper - 1 tsp
  • Soy sauce - 1 tbsp
  • Salt as needed
Method

Preparation of schezwan sauce:

  1. Soak dry red chillies for about 1/2 hour in water(remove seeds as much as possible).
  2. Drain and grind the soaked red chillies adding 1 tbsp of water.
  3. Heat 1/2 tbsp oil in a pan, saute chopped ginger and garlic for 5 minutes.
  4. Add grounded red chilli paste, stir well.
  5. Add salt, pepper and soy sauce.
  6. Pour 1/4 cup of water and boil till oil seperates.

Preparation of noodles:
  1. Boil 5 cups of water adding 1/2 tbsp of oil and some salt.
  2. When it bubbles up, add noodles.
  3. Cover and cook for 6-7 minutes.
  4. Drain and keep cooked noodles aside.

Preparation of schezwan noodles:

  1. Heat 1 tbsp of oil in a pan.
  2. Add sliced onions, saute till golden brown.
  3. Add sliced capsicum, toss well.
  4. Add beans / any vegetable. (you can add any no of vegetable or meat)
  5. Stir fry for 5 minutes (till vegetables are cooked)
  6. Add schezwan sauce.
  7. Add salt and pepper.
  8. Add cooked noodles.
  9. Stir well and simmer for 5 minutes.
  10. Garnish and serve.
