CAPSICUM EGG GRAVY ( SEMI-DRY)


HEALTH BENEFITS
CAPSICUM - Fights against cancer, burns fat and contains more fiber.
EGG - High protein and supports muscle growth and recovery.

INGREDIENTS
  • Egg - 2 (Medium)
  • Capsicum - 1 (large)
  • Onions - 1 (large)
  • Tomato - 1 (medium)
  • Cashew nuts - 5
  • Ginger - a small piece
  • Garlic - 2 cloves
  • Coriander seeds - 1 tsp
  • Cumin seeds - 1/4 tsp
  • Garam masala - 1/2 tsp
  • Chilli powder - 1 tsp
  • Turmeric - a pinch
  • Oil - 2 1/2 tsp
  • Sugar - 1 tsp
  • Salt - as needed
  • Water - 1/4 cup(for grinding) and 1/4 cup for sauteing
  • Coriander leaves for garnishing
METHOD
  1. Boil eggs.
  2. Take tomatoes, cashew nuts, ginger, garlic, coriander seeds, cumin seeds and make puree by adding 1/4 cup of water, keep aside.
  3. Heat 1 tsp oil in a pan and saute chopped capsicum and put aside.
  4. Now, in the same pan heat remaining 1 1/2 tsp of oil and saute chopped onions till it turns golden brown color.

  5. Add capsicum.
  6. Then, add red chilli powder, turmeric and garam masala.
  7. Add puree.
  8. Add boiled and chopped eggs and 1/4 cup of water.
  9. Add salt and sugar.
  10. Cook in medium flame till consistency becomes thick.
  11. Garnish with coriander leaves.
  12. Goes well with chappathi.
