BABY CORN GRAVY

HEALTH BENEFITS OF BABY CORN

It is an excellent source of B vitamins which helps in digestion. and it provides folic acid, thiamine, riboflavin and niacin.


INGREDIENTS
Oil - 1 tbsp
Butter - 1 tbsp
Cumin - 1/2 tsp
Sugar - 1/2 tsp
Baby corn - 200 g
Capsicum - 4-5 pieces
Tomato - 2
Turmeric - a pinch
Dried fenugreek leaves - 1/2 tsp
Coriander leaves - as needed

For Grinding:
Onion - 1/2
Ginger - small piece
Garlic - 2 cloves
Coriander powder - 1 tbsp
Red chilli - 4
Poppy seeds - 1 tsp
Water - 1 tsp (if needed)

METHOD
  1. Grind the ingredients mentioned under for grinding and keep aside.
  2. Heat oil in a pan, add 1/2 tbsp butter, melt.
  3. Now, add cumin seeds, sugar and the grounded paste, saute well Keeping in low flame for 5-10 mins till the raw smell goes.
  4. Add finely chopped tomatoes, salt and turmeric.
  5. Close lid till the tomato gets cooked well and becomes mushy.
  6. Now, add baby corn and capsicum( chopped length-wise).
  7. Once masala gets mixed add 1/2 cup water and leave it to boil.
  8. Keep in low flame for 5-7 mins.
  9. Add dried fenugreek leaves and garnish with coriander leaves.
  10. Finally add remaining 1/2 tbsp butter.
