Kothu Parotta
     
                     

Ingredients:

  • Oil - 2tbs
  • Onions - 3 (Finely chopped)
  • Green chillies - 3
  • Ginger and garlic paste - 1/2 tsp
  • Tomatoes - 2
  • Turmeric powder - 1/2 tsp
  • Chilly powder -1/2 tsp
  • Garam masala - 1 tsp
  • Curry leaves - few
  • Salt - as required 
  • Parotta - 7
  • Egg - 3
  • Salna/ Kuruma - 1/2 cup


Method:

  • Heat oil in a pan. Add chopped curry leaves, onions and green chillies - Saute on medium flame for 4-5 minutes.                 
  • Add ginger and garlic paste ; fry well until raw smell leaves. Then add the finely chopped tomatoes and saute for 2 minutes.


  • Add salt, turmeric, chilli and garam masala powder ; fry well. Now move the masala to side of the pan and break the eggs into it ; scramble the eggs until it is nearly cooked and mix the masala with the egg.                                                           


  • Add the cooked and shredded parotta and salna/ kuruma to it. Let it cook for 5 minutes in a low flame and garnish with the coriander leaves and curry leaves. Serve hot.
