Grind green chillies, cumin seeds, spinach, garlic and salt by adding water.
Make a paste.
Mix it with dosa batter.
Make dosas and serve with red chilli chutney.

Chilli Cheese Toast
Ingredients
Bread - 6
Chilly flakes -2 tsp
Parsley - 1 tsp
Oregano - 1/2 tsp
Salt - as required
Cheese - as required
Egg White - 3
Capsicum - 1/4 cup
Garlic - 6 cloves
Jalapeno - few
Method
Beat egg white in a bowl and add chopped garlic, capsicum, jalapenos, salt oregano, parsley and chilli flakes, beat along.
Cut bread sides.
Place the above mixture on top of bread and grate cheese, sprinkle on each bread piece.
Preheat oven 180 C.
Place bread pieces and bake for 8-10 mins till it turns brown.
Serve hot with ketchup!

Rustic Cabbage Pulao &
Onion Chutney
Ingredients Cabbage Pulao
Olive oil - 1 tsp
Cabbage - 1/2 cup
Onions - 1 (medium)
Basmati Rice (cooked) - 1 cup
Corn (fresh/frozen) - 1/4 cup
Salt as needed
Cinnamon Powder - 1 tsp
Crushed Pepper - 1 tsp
Onion Chutmey
Oil - 2 tsp
Mustard - 1 tsp
Onion - 1 (large)
Green chillies - 2
Tamarind water - 1/2 cup
Jaggery - 1 tsp
Method Cabbage Pulao
Cook basmati rice and keep aside.
Heat oil in a pan.
Add sliced onions, cook till transparent.
Add chopped/shredded cabbage.
Roast till it turns brown (burnt with smoky flavor).
Add golden corn and toss them along with cabbage.
Add cooked basmati rice.
Add salt.
Add cinnamon powder, crushed pepper and toss well.
Switch off the flame, serve with onion chutney.
Onion Chutney
Extract tamarind juice for tamarind by soaking it in hot water, keep aside.
Heat oil, add mustard.
Add sliced green chillies.and chopped onions.
Saute them.
Add tamarind juice.
Leave them to boil.
Add jaggery at last.
Make them thick and serve with cabbage pulao

Falafel
Falafel is a deep-fried ball or patty made from ground chickpeas. Falafel is a traditional Egyptian and Middle Eastern food, commonly served in a pita, which acts as a pocket, or wrapped in a flatbread known as taboon.
Falafel is a common dish eaten throughout the Middle East. The fritters are now found around the world as a replacement for meatand as a form of street food.
Ingredients
Chick Peas - 1 cup
Coriander leaves - few
Parsley - few
Salt as needed
Chilli powder - 1 tsp
Onion - 1
Garlic - 10 cloves
Pepper powder - 1/4 tsp
Coriander powder - 1/4 tsp
Oil for deep frying
Method
Soak chick peas in water overnight.
Drain water and grind chick peas along with coriander leaves, parsley, chilli powder and salt (without adding water).
Heat pan and dry roast peppercorns, fennel seeds separately.
Cool them and powder them finely.
Heat oil in a pan, add chopped onions.
Cook till onions are caramelized (brown colored).
Add ginger garlic paste, cook for 2 mins.
Add chopped tomatoes,salt, chilli powder, coriander powder, turmeric,little water and cook till tomatoes becomes mushy.
Now add grounded pepper fennel powder.
Mix them well, add chicken pieces.
Add water.
Cover and cook till chicken gets cooked and water drains.
Garnish with curry leaves and serve.

Victoria Sandwich
Ingredients For Base:
Eggs - 2
Sugar - 100 g
Self - raising flour- 100 g
Baking powder - 1 tsp
For Filling and Topping:
Strawberry jam - 2 tbsp
Strawberries - few
Little granulated sugar for sprinkling
Method
Preheat oven to 180 degree C.
Grease cake tin with butter or parchment paper and keep aside.
Measure butter, sugar and eggs, add into a large bowl one by one.
Beat all together until thoroughly blended.
Add flour and baking powder.
Blend with butter sugar and egg mixture with spatula.
Pour mixture into cake tin.
Bake in preheated oven for about 25 minutes until a tooth pick inserted comes out clean or until well risen tops and cakes spring back when lightly pressed with a finger.
Leave to cool in the tin for few mins and then cool on a wire rack for few mins.
When completely cold, divide cake into two equal parts, sandwich them with strawberry jam.
Sprinkle some sugar and decorate with strawberries, serve.
