Mangalorean Style Veg Biryani

Ingredients
  • Coconut oil - 2 tbsp
  • Onions - 2
  • Ginger - 1 inch (finely chopped)
  • Curry leaves - few
  • Green chillies - 2
  • Turmeric - 1/4 tsp
  • Tomato - 1
  • Carrot - 1
  • Potatoes - 2
  • Peas - 1/3 cup
  • Basmati Rice - 1 cup
  • Water - 2 cups
  • Salt as needed

To Make Masala Paste

  • Grated coconut - 1/4 cup
  • Ginger - 1 inch
  • Garlic - 4 fat cloves
  • Red chillies - 4
  • Fennel seeds - 1 tsp
  • Poppy seeds - 1 tsp
  • Coriander seeds - 1 tsp
  • Fenugreek seeds - 8
  • Cloves - 2
  • Cardamom pod - 2
  • Cinnamon stick - 1/2 inch
  • Watrer - 1/4 cup
Method
  1. Soak basmati rice in water for 30 mins.
  2. Meanwhile, grind all the ingredients under 'to make masala paste' above and make a paste.
  3. Chop all vegetables mentioned above.
  4. Heat coconut oil in a pressure cooker, saute chopped onions, green chilles, curry leaves.
  5. Add chopped tomatoes and cook till it becomes mushy.
  6. Add grounded masala paste and cook for 3 mins.
  7. Add all vegetables ( carrot, peas, potatoes) and blend well with masala.
  8. Add water.
  9. Add soaked rice by draining its water.
  10. Pressure cook for 2 whistles and simmer for 5-8 mins.
  11. Garnish with mint leaves and serve.(Add more vegetables if needed)
