Coconut Chicken Curry

Ingredients
  • Chicken - 500 g
  • Onions - 1 (thinly sliced)
  • Tomatoes - 2 (medium chopped)
  • Salt as needed
  • Oil - 1 tbsp
  • Coriander/ curry leaves for garnishing.
For Masala:
  • Coriander seeds - 2 tsp
  • Peppercorns - 1 tsp
  • Fennel seeds - 1 tsp
  • Cumin seeds - 1 tsp
  • Dry Red chillies - 5
  • Dry Grated/Desiccated Coconut - 1/4 cup
  • Garlic cloves - 5
  • Ginger - 1 inch
Method
  1. Rub chicken with little chilli powder and salt.
  2. Dry roast all the masala ingredients except ginger and garlic.

  3. Cool them and grind them along with ginger and garlic adding little amount of water to form a paste.
  4. Heat oil in a pan, saute onions, add the grounded masala and salt.
  5. Add chicken pieces.
  6. Add Tomatoes when water releases from chicken.
  7. Add salt, water as needed , cover and cook for 20-30 mins in medium low flame.
  8. Garnish and serve with hot rice.
