Coconut Chicken Curry
Ingredients
- Chicken - 500 g
- Onions - 1 (thinly sliced)
- Tomatoes - 2 (medium chopped)
- Salt as needed
- Oil - 1 tbsp
- Coriander/ curry leaves for garnishing.
- Coriander seeds - 2 tsp
- Peppercorns - 1 tsp
- Fennel seeds - 1 tsp
- Cumin seeds - 1 tsp
- Dry Red chillies - 5
- Dry Grated/Desiccated Coconut - 1/4 cup
- Garlic cloves - 5
- Ginger - 1 inch
- Rub chicken with little chilli powder and salt.
- Dry roast all the masala ingredients except ginger and garlic.
- Cool them and grind them along with ginger and garlic adding little amount of water to form a paste.
- Heat oil in a pan, saute onions, add the grounded masala and salt.
- Add chicken pieces.
- Add Tomatoes when water releases from chicken.
- Add salt, water as needed , cover and cook for 20-30 mins in medium low flame.
- Garnish and serve with hot rice.
