Hot Mutton Curry
Mutton curry is an Indian curry dish that is prepared from mutton and vegetables and originated in Bengal and Punjab. Primary ingredients of mutton curry include mutton, onion, tomato and spices.Mutton curry was originally prepared heated by a fire in a large pot. It may now be cooked using pressure cookers and slow cookers. Mutton curry may be served with rice.

Ingredients

  • Mutton - 350 g
  • Onion - 2 (large)
  • Red chillies - 7-8
  • Tamarind Puree - 1 cup
  • Oil - 2 tbsp
  • Cinnamon stick - 1
  • Cloves -  1
  • Cardamom - 1
  • Turmeric Powder - 1/4 tsp
  • Chilli Powder - 1 tsp
  • Meat Masala Powder - 1 tsp (optional)
  • Fennel seeds - 1 tsp
  • Cuim seeds - 1 tsp
  • Coriander powder - 1 tsp
  • Ginger Garlic paste - 1 tbsp
  • Salt as needed
  • Water as needed
  • Curry/Coriander leaves for garnishing

Method

  1. Soak red chillies in water for 45 mins to 1 hour, keep aside.
  2. Soak tamarind in a hot water and extract juice, keep aside.
  3. Heat oil in a pressure cooker, add all the spices (cinnamon, cardamom and cloves).
  4. Saute chopped onions.
  5. Add turmeric, chilli powder, meat masala powder, fennel seeds, cumin seeds and coriander powder.

  6. Add ginger garlic paste and saute.
  7. Add washed mutton pieces and salt.
  8. Once mutton is coated well with the masala, close lid and pressure cook it for 5 whistles adding enough of water.
  9. Meanwhile, grind soaked red chillies adding 2 tbsp of water.
  10. Pour grounded red chilli paste into extracted tamarind water and mix well.
  11. Once mutton is cooked, open lid and pour the mixed tamarind and red chilli puree.
  12. Leave it to boil for 15 mins in medium flame.
  13. Serve hot.
