BABY CORN - PEANUT GRAVY
INGREDIENTS
- Baby corn - 200 g
- Oil - 2 tsp
- Mustard - 1 tsp
- Cumin seeds - 1/2 tsp
- Dried fenugreek leaves - 1 tsp
- Onion - 1
- Tomato - 2
- Turmeric - a pinch
- Chilli powder - 2 tsp
- Roasted peanuts - 1/4 cup
- Coriander leaves - few
- Salt as needed
METHOD
- Grind roasted peanuts well adding little water and keep aside.
- Heat oil in a pan add mustard.
- Once mustard splutters add cumin.
- When cumin crackles add finely chopped onion and saute till it turns transparent.
- Add tomato, turmeric and salt.
- Cook tomato till it becomes mushy.
- Then add chilli powder.
- Now, add baby corn, mix well and leave for 5 mins till it gets cooked.
- Add grounded peanut paste, stir well( add more water if needed).
- Finally add dried fenugreek leaves and coriander leaves.
