BABY CORN - PEANUT GRAVY


INGREDIENTS
  • Baby corn - 200 g
  • Oil - 2 tsp
  • Mustard - 1 tsp
  • Cumin seeds - 1/2 tsp
  • Dried fenugreek leaves - 1 tsp
  • Onion - 1
  • Tomato - 2
  • Turmeric - a pinch
  • Chilli powder - 2 tsp
  • Roasted peanuts - 1/4 cup
  • Coriander leaves - few
  • Salt as needed

METHOD
  1. Grind roasted peanuts well adding little water and keep aside.
  2. Heat oil in a pan add mustard.
  3. Once mustard splutters add cumin.
  4. When cumin crackles add finely chopped onion and saute till it turns transparent.
  5. Add tomato, turmeric and salt.
  6. Cook tomato till it becomes mushy.
  7. Then add chilli powder.
  8. Now, add baby corn, mix well and leave for 5 mins till it gets cooked.
  9. Add grounded peanut paste, stir well( add more water if needed).
  10. Finally add dried fenugreek leaves and coriander leaves.
