SESAME SEEDS CHICKEN

INGREDIENTS

  • Chicken - 1/2 kg
  • Red chilly - 10
  • Cumin seeds - 1 tbsp
  • Coriander seeds - 4 tbsp
  • Egg - 1
  • Tumeric - a pinch
  • Ginger Garlic Paste - 1 tbsp
  • Sesame seeds - 2 tbsp
METHOD
  1. Dry roast red chillies, cumin seeds, coriander seeds.
  2.  Make a finest powder.
  3. Marinate chicken with ginger garlic paste, grounded powder,tumeric, egg and sesame seeds.
  4. Keep aside for an hour.
  5. Heat oil in a pan and shallow fry it till chicken gets cooked.

WHIPPED CREAM CAKE


INGREDIENTS
  • Cake flour - 3/4 cup
  • Sugar - 1/2 cup
  • Butter - 1 1/2 tbsp
  • Milk - 1 tbsp
  • Vanilla extract - 2 tsp
  • Egg - 3
  • Salt - 1/4 tsp

METHOD
  1. Preheat the oven to 180 C at least 20 minutes before. 
  2. Put butter and milk In a small bowl and microwave until the butter melts.
  3. Sift the cake flour 2 times. Set aside.
  4. In a bowl of a stand mixer, add eggs and sugar. Over a double boiler (placing the bowl over a pot with simmering water on low heat), whisk the egg mixture until it becomes lukewarm (until the sugar dissolves). 
  5. Then set the bowl on the stand mixer, and whip the egg mixture until very thick as shown in the picture.


  6. Add vanilla and mix.
  7. Add sifted cake flour in 3 parts. 
  8. Fold in the first one-third of the flour by hand with a spatula (not with the mixer). After the flour is incorporated, add the next part of flour and again fold in with the spatula. Repeat.
  9. Next, add the mixture of melted butter and milk and fold in with the spatula.
  10. Put the batter in the prepared pan. Bake for 20-25 minutes.
  11. Take the cake out from the oven and leave for 15 minutes. Finally, remove the cake from the cake pan.
  12. Remove the top layer.
  13. Cut the cake into two horizontally into equal parts and apply whipped cream evenly on top of two parts. (Whipped cream recipe)
  14. Place one above another and decorate as you wish.
TIPS:
  • Sift the flour thrice for better consistency.
  • Beat eggs well as shown in the picture above to avoid lumps.

TOMATO CHUTNEY


INGREDIENTS
  • Tomatoes - 2 (medium)
  • Onion - 1 (medium)
  • Garlic - 2 cloves
  • Dry red chillies - 3
  • Asafoetida - a pinch
  • Mustard - 1/2 tsp
  • Urad dal - 1/2 tbsp
  • Gingelly oil - 1/2 tbsp

METHOD
  1. Heat oil in a pan and crackle mustard.
  2. Add urad dal, asafoetida, then dried red chillies and garlic.
  3. Add chopped onions and saute.
  4. Add chopped tomatoes.
  5. Cool them and grind.

SPRING ONION MASALA

HEALTH BENEFITS OF SPRING ONIONS
Spring onions are good for cardiovascular health. They lower the oxidation of cholesterol and reduce the risk of coronary heart disease.Anti-bacterial properties in it help to fight against cold and flu. Good against eye disease and eye problems.

INGREDIENTS
  • Spring onion - a bunch(finely chopped)
  • Oil - 1 tbsp
  • Mustard - 1/2 tsp
  • Cumin - 1/2 tsp
  • Turmeric - a pinch
  • Onion - 1/2 (large)
  • Tomatoes - 2 (medium)
  • Dried fenugreek leaves - 1/4 tsp
  • Spring onion white lisbon 
  • Red chilli powder - 1/2 tbsp
  • Garam masala  - a pinch
  • Salt - as needed
  • Water - 1/2 cup
  • Sugar - 1/2 tsp


METHOD
  1. Heat oil in a pan add mustard and cumin.
  2. Once it pops add chopped onion, spring onion white lisbon and dried fenugreek leaves.
  3. Saute untill it turns golden brown.
  4. Then add chopped tomatoes.
  5. Add a pinch of turmeric, red chilli powder.
  6. Add salt, chopped spring onions, mix through.
  7. Add water, cover and cook for 10 mins in low flame.
  8. Once texture thickens, sprinkle a pinch of garam masala 
  9. Finally, add sugar.
  10. Goes well with chappathi, curd rice and dosa.

VERMICELLI KESARI



INGREDIENTS
  • Vermicelli / Semiya - 1 cup
  • Sugar - 3/4 cup
  • Water - 2 cups
  • Ghee - 5 tbsp
  • Cardamom powder - 1/4 tsp
  • Cashew nuts - 6-7
  • Raisins - 5
  • Orange food color - a pinch
METHOD
  1. Heat a tbsp of ghee in a pan, roast cashew nuts and raisins till golden brown in color,  keep aside.
  2. In the same pan, add a tsp of ghee and roast vermicelli till they are slightly golden brown in color.
  3. Then add 2 cups of water to it along with orange food color and bring it to boil.
  4. Pour the food color water over roasted vermicelli.
  5. Once vermicelli is 3/4 done, add fried cashew nuts, raisins, cardamom powder and sugar, allow them to cook over medium flame.
  6. Cook till vermicelli becomes soft and water is completely absorbed.
  7. Add remaining ghee. 
  8. Mix well thoroughly and serve it in a bowl.
Note: 

  • Don't mix with spatula much after adding sugar as the texture will become rubbery at the end.

VANILLA PANNA COTTA (COOKED CREAM - ITALIAN DESSERT)


HEALTH BENEFITS
 Panna Cotta is the perfect desert. The dish does not contain any GLUTEN and it is particularly rich in sodium, potassium and calcium and it is a great dessert with fresh fruits and berries and low fat.

INGREDIENTS

  • Heavy Cream - 110 g (1/2 cup)
  • Granulated Sugar - 15 g (1 tbsp)
  • Vanilla Extract - 1/4 tsp
  • Agar Agar Powder - 0.5 g (1/4 tsp)
  • Hot water - 1 tbsp
  • Strawberries - 5-6 (for garnishing)
METHOD
  1. Add Agar Agar Powder in 1 tbsp of hot water and mix through till all the powder get dissolved and keep aside for 5 mins.
  2. In a pan add 1/2 cup of heavy cream and 1 tbsp of granulated sugar.
  3. In another pan  put in the dissolved agar agar powder and boil it.
  4. Once the mixture comes to boil, keep it boiling for 1 min.
  5. Now, put the cream and sugar mixture pan over a medium high heat and bring it to simmer.
  6. While the cream is simmering add the vanilla extract, mix well and then add agar agar mixture.
  7. Mix well in low flame for a while till everything gets dissolved.
  8. Pour the mixture into a cup and put inside fridge to set for about 4 hours or overnight.
     
  9. Garnish with strawberries before serving.
