SHAKSHUKA
Shakshouka or shakshuka is a dish of eggs poached in a sauce of tomatoes, chili peppers, and onions, often spiced with cumin. In its present egg and vegetable-based form it is of Tunisian origin, and is now popular among many ethnic groups of the Middle East and North-Africa.
Ingredients:
- Oil - 1 tbsp (olive preferably)
- Eggs - 3 nos (depends on servings you are making)
- Ripe tomatoes - 5 (large)
- Garlic cloves - 5
- Onion - 2 (medium)
- Cilantro - 1 handful
- Chilli powder - 2 tsp
- Cumin powder - 1 tsp
- Black Pepper and Salt to taste
- Heat pan.
- Add oil.
- Add onions, garlic and saute for about 15 mins until translucent (stir occasionally without burning).
- Add well chopped ripened tomatoes.
- Add salt, pepper cumin powder and chilli powder.
- Saute well.
- Cover the pan with a lid and continue to cook tomatoes for 15-20 mins in low medium flame.
- When tomatoes are well cooked and mashed, create a small hole in the sauce and crack the egg into the hole you've created.
- Cover with the lid and cook till it gets cooked.
- Garnish with coriander leaves and serve.
