SHAKSHUKA

Shakshouka or shakshuka  is a dish of eggs poached in a sauce of tomatoes, chili peppers, and onions, often spiced with cumin. In its present egg and vegetable-based form it is of Tunisian origin, and is now popular among many ethnic groups of the Middle East and North-Africa.

Ingredients:
  • Oil - 1 tbsp (olive preferably)
  • Eggs - 3 nos (depends on servings you are making)
  • Ripe tomatoes - 5 (large)
  • Garlic cloves - 5
  • Onion - 2 (medium)
  • Cilantro - 1 handful
  • Chilli powder - 2 tsp
  • Cumin powder - 1 tsp
  • Black Pepper and Salt to taste
Method:
  1. Heat pan.
  2. Add oil.
  3. Add onions, garlic and saute for about 15 mins until translucent (stir occasionally without burning).
  4. Add well chopped ripened tomatoes.
  5. Add salt, pepper cumin powder and chilli powder.
  6. Saute well.
  7. Cover the pan with a lid and continue to cook tomatoes for 15-20 mins in low medium flame.
  8. When tomatoes are well cooked and mashed, create a small hole in the sauce and crack the egg into the hole you've created.
  9. Cover with the lid and cook till it gets cooked.
  10. Garnish with coriander leaves and serve.
