Ras malai

Ras malai or rossomalai is a dessert originating from the Indian Subcontinent. The name ras malai comes from two words in Hindi: ras, meaning "juice", and malai, meaning "cream". It has been described as "a rich cheesecake without a crust. Ras malai is believed to have originated in West Bengal. 
Ingredients
  • Milk - 2 1/2 cup
  • Rasagullas - 10
  • Sugar - 4 tbsp
  • Saffron - few strands
  • Cardamom powder- 1/2 tsp
  • Nuts - few
  • Evaporated milk -1/4 cup
Method
  1. Take a pan - add sugar, add a tbsp of milk and whisk it well.
  2. Now add remaining milk and let it boil in medium flame for 5 mins. 
  3. Keep stirring.
  4. Crush saffron strands and add it.The color of milk will change to slightly yellow color, after saffron is added, let it boil for a minute.
  5. Then add chopped nuts, cardamom powder give a quick mix and let it boil.

  6. Take lemon squeezer and squeeze the excess sugar syrup from the rasgullas (Be gentle else the rasgullas will crumble).
  7. Now add the rasgullas to the milk and let it simmer for 5 mins in low flame.
  8. Switch off.
  9. Cool down for few mins, then refrigerate for at least an hour.
  10. Serve chilled!
