Chettinad Prawn Masala

Ingredients

  • Prawns - 250 g
  • Oil - 1 tbsp
  • Cinnamon stick - 1 inch
  • Fennel seeds - 1 tbsp
  • Onions - 1 (large)
  • Tomatoes - 2 (medium)
  • Ginger garlic paste - 1 tbsp
  • Turmeric - 1/4 tsp
  • Chilli powder - 2 tsp
  • Salt as needed
  • Yoghurt - 1 1/2 tbsp
  • Curry leaves - 1 pinnate

Method

  1. Heat oil in a pan, add cinnamon stick, fennel seeds and cook till fennel seeds releases its aroma.
  2. Add chopped onions and saute till it turns dark brown (caramelized).
  3. Add ginger garlic paste and cook till raw smell goes.
  4. Add chopped tomatoes, turmeric, chilli powder, salt.
  5. Sprinkle some water and cook till tomatoes becomes mushy.
  6. Leave it to drain
  7. Add yogurt.
  8. Add prawns and mix well.
  9. Garnish with curry leaves and serve.(Whole dish is cooked with the flavor of fennel seeds and caramelizing onions is the main step of the recipe as it brings sweetness).
