Aloo Paratha



Ingredients

For stuffing:
  • Oil - 1 tbsp
  • Fennel powder - 1 tsp
  • Onion - 1(large)
  • Green chillies - 2
  • Ginger Garlic paste - 1 tbsp
  • Potato - 4
  • Turmeric - a pinch
  • Garam masala - 1/2 tsp
  • Salt as needed
For dough:
  • Whole wheat flour - 2 cups
  • Oil - 1-2 tbsp
  • Salt as needed
  • Water as needed

Method
  1. Boil or steam potato, peal them, mash them and keep aside.
  2. Heat oil in a pan, add fennel powder.
  3. Add sliced onions and salt, saute.
  4. Add green chillies and ginger garlic paste, saute well again.
  5. Add turmeric, garam masala.
  6. Add mashed potato, stir well.

  7. In another bowl or pan, take whole wheat flour, add salt, oil and about half of the water.
  8. Bring the mixture together and knead into a smooth soft dough. 
  9. cover and keep the dough aside for 20 to 30 minutes.
  10. Make small balls out of the dough, flatten them and keep the potato mixture in the center of it.
  11. Gently bring the sides of flattened dough together and seal the pleats together.
  12. Now, gently roll the dough with a rolling pin, if sticky sprinkle some flour on it and roll to the required size.


  13. Place the paratha on a hot tawa.
  14. When the paratha is half cooked, flip it and apply some ghee/oil.
  15. Flip again and cook both sides till parathas are puffed and get roasted.
  16. Serve with yoghurt garnished with cumin powder or pickle.
