Aloo Paratha
Ingredients
For stuffing:
- Oil - 1 tbsp
- Fennel powder - 1 tsp
- Onion - 1(large)
- Green chillies - 2
- Ginger Garlic paste - 1 tbsp
- Potato - 4
- Turmeric - a pinch
- Garam masala - 1/2 tsp
- Salt as needed
- Whole wheat flour - 2 cups
- Oil - 1-2 tbsp
- Salt as needed
- Water as needed
Method
- Boil or steam potato, peal them, mash them and keep aside.
- Heat oil in a pan, add fennel powder.
- Add sliced onions and salt, saute.
- Add green chillies and ginger garlic paste, saute well again.
- Add turmeric, garam masala.
- Add mashed potato, stir well.
- In another bowl or pan, take whole wheat flour, add salt, oil and about half of the water.
- Bring the mixture together and knead into a smooth soft dough.
- cover and keep the dough aside for 20 to 30 minutes.
- Make small balls out of the dough, flatten them and keep the potato mixture in the center of it.
- Gently bring the sides of flattened dough together and seal the pleats together.
- Now, gently roll the dough with a rolling pin, if sticky sprinkle some flour on it and roll to the required size.
- Place the paratha on a hot tawa.
- When the paratha is half cooked, flip it and apply some ghee/oil.
- Flip again and cook both sides till parathas are puffed and get roasted.
- Serve with yoghurt garnished with cumin powder or pickle.
